Vegan Blondies
Description
This recipe starts by mixing melted vegan butter and tightly packed brown sugar to create a smooth base. Vanilla extract and applesauce, which replaces eggs, are stirred in to add moisture and flavor. Then, all-purpose or gluten-free flour, baking powder, and a pinch of sea salt are incorporated to provide structure. Folding in vegan chocolate chips distributes rich, sweet pockets throughout the batter.
Pressing the dough evenly into a parchment-lined pan and baking at 350°F for 18 to 20 minutes produces blondies that are set in the middle yet tender. Cooling for 30 minutes before slicing allows them to firm up without becoming dry.
These vegan blondies offer a plant-based dessert option without compromising texture or flavor. The applesauce substitution keeps them moist while the vegan butter lends richness akin to traditional blondies.
For best results, avoid overbaking to maintain softness. Leftovers keep well at room temperature for several days and can be frozen. Using Earth Balance or similar vegan butters works well for the fat component. Both regular and gluten-free flour can be used, standing in for wheat flour.
