Vegan Chocolate Orange Oat Bars

These vegan chocolate orange oat bars are quick and easy, but full of flavour. The decadent chocolate pairs beautifully with the citrusy orange.

Ingredients

Servings
  • ½ cup dairy-free butter 115g
  • 1 cup oats 85g
  • 3 tablespoon sugar
  • 2 teaspoon cocoa powder unsweetened
  • 2 tablespoon orange juice
  • ½ teaspoon orange zest
  • Pinch salt
  • ¾ cup all-purpose flour 100g
  • 1 teaspoon baking powder

For the icing:

  • 125 g powdered sugar confectioner's, icing sugar
  • 2 tablespoon orange juice
  • 2 teaspoon cocoa powder unsweetened

Instructions

  1. Preheat oven to 180C/350F. Lightly grease a loaf pan.
  2. In a large saucepan over a low heat, melt the butter/spread.
  3. Remove from the heat and stir in the oats, sugar, cocoa, orange juice, zest and salt, mixing until completely combined.
  4. Stir in the baking powder and the flour, a little bit at a time.
  5. Pour into the prepared pan and gently press down. Bake for 20 minutes.
  6. Remove from the oven and leave in the tin to cool.

For the icing:

  1. Once the bars are cooled, combine the icing sugar, orange juice and cocoa, mixing until smooth and a thick glossy consistency.
  2. Pour over cooled oats, and smooth with a spatula.
  3. Leave to cool completely.
  4. Once the icing has set, cut into bars and store in an airtight container.
