Vegan Gingerbread Protein Blondies

  • 1 chickpeas 15 oz can, unsalted, drained and rinsed
  • 6 tablespoon almond butter unsalted, creamy
  • cup maple syrup
  • 2 teaspoon vanilla extract
  • ¼ cup coconut sugar
  • ¼ cup almond flour
  • 2 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon cloves ground
  • ½ teaspoon ground ginger
  • ¾ teaspoon baking soda
  • ¼ teaspoon baking powder
  • teaspoon salt
  • cup chocolate chips

Instructions

  1. Preheat your oven to 350F and lightly grease and line an 8” x 8” tin with parchment paper. 
  2. Drain and rinse chickpeas under COLD water for at least 30 seconds. Gently pat dry.
  3. Add all ingredients – excluding the chocolate chips – into a food processor. Blend until completely smooth. For about 45 seconds to 1 minute. 
  4. Remove the blade and fold in chocolate chips with a spatula. Save a few for the top!
  5. Evenly spread the batter into the greased tin and sprinkle the rest of the chocolate chips on top.
  6. Bake for 25-30 mins, or until a toothpick comes out clean.
  7. Let cool before serving, and enjoy!
