Vegan & Gluten-Free Chocolate Chip Cookies

These Vegan & Gluten-Free Chocolate Chip Cookies combine oat flour, coconut sugar, and flax or chia eggs for a plant-based, allergy-conscious treat. The dough does not spread much during baking, resulting in a slightly thick cookie with a chewy texture and pockets of melted dark chocolate chips. Coconut oil and vanilla add richness and flavor, balancing the coconut sugar's caramel notes. These cookies offer a straightforward way to enjoy chocolate chip cookies without gluten or eggs, fitting for those with those dietary preferences.

Description

The Vegan & Gluten-Free Chocolate Chip Cookies are crafted primarily from oat flour made by grinding gluten-free rolled oats, providing a gentle texture base that performs well without gluten. Coconut sugar lends sweetness along with a hint of molasses flavor, complemented by the richness of melted coconut oil and vanilla extract. Flax or chia eggs serve as the egg substitute to bind the dough. The dough is scooped onto parchment-lined sheets and gently flattened since it does not spread much while baking. Baking at 350°F until edges are firm and lightly golden yields a tender cookie with a chewy crumb and melty dark chocolate chips throughout.

This recipe is suitable for those seeking vegan and gluten-free cookie options, providing sweetness and richness with familiar chocolate chip cookie characteristics. The soft texture and controlled spreading make the cookies easy to portion and bake in batches.

Ingredients

Servings
  • 1 3/4 cup oat flour gluten-free
  • 3/4 cup coconut sugar
  • 2 flax egg recipe here, or chia egg (as egg substitute
  • 1/3 cup coconut oil melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3/4 cup dark chocolate chips
  • *I made the oat flour at home by grinding gluten-free rolled oats in my blender.

Instructions

  1. Preheat the oven to 350F and line a baking sheet with parchment paper. In a large bowl, combine flour, sugar, chia eggs, oil, vanilla and salt, and stir well to create a uniform dough. Fold in the chocolate chips, then scoop the dough onto the lined baking sheet, leaving about 1 1/2-inches of space between the cookies. Gently flatten the dough with your fingers, as these cookies won't spread too much with baking.
  2. Bake for 10-12 minutes at 350F, until the cookies are lightly golden and the edges are firm. Cool on the pan for 5 minutes, then transfer the cookies to a wire rack to cool completely.
