Vegan Gluten-Free Waffles (Oil-Free!)
Description
The recipe mixes wet ingredients including dairy-free milk, ground flaxseed, maple syrup, and vanilla extract separately from dry ingredients which consist of gluten-free all-purpose flour, almond flour, baking powder, cinnamon, and salt. After combining, the batter rests briefly while the waffle iron heats.
Waffles are cooked in a preheated waffle iron for 5-7 minutes without opening, allowing steam to stop and the exterior to crisp while the interior stays tender. The batter portion is moderate to avoid spreading, and the waffles develop a subtle cinnamon flavor with a soft yet structured texture.
These waffles can be served with typical toppings and also adapted to pancakes. Flavor can be varied with additional vanilla or cinnamon, or a touch of almond extract.
Using Bob’s Red Mill gluten-free flour is suggested for texture. Nut-free variations can be made by substituting oat flour for the almond and all-purpose flours, though this yields a denser waffle. Non-stick waffle irons may not require oil, but others might benefit from a light spray.
Ingredients
Wet ingredients:
- 1 1/2 cups dairy-free milk
- 2 Tbsp. Flaxseed ground
- 1 Tbsp. pure maple syrup (optional)
- 1 tsp. vanilla extract
Dry ingredients:
- 1 cup all-purpose flour gluten-free
- 1 cup almond flour super-fine
- 1 Tbsp. baking powder
- 1/4 tsp. ground cinnamon
- 1/4 tsp. salt
Instructions
- In a large bowl, combine all wet ingredients. Whisk and set aside.
- In a separate bowl, combine all dry ingredients. Stir.
- Add dry ingredients to wet, and whisk until just combined. Set batter aside to rest for a few minutes while you warm your waffle iron.
- Turn on and preheat your waffle iron to desired setting. (I set mine medium to medium-high.)
- Then using a 1/2-cup measuring cup, scoop out batter and place in the middle of the hot waffle iron. (No need to overfill it - I find it cooks better when I don't push the batter all the way to the edge.)
- Close and let cook 5-7 minutes or until steam has completely stopped. Be sure not to open during cooking!
- When fully cooked, carefully remove waffle and continue process with the remaining batter.
Notes
- Bob's Red Mill gluten-free all-purpose flour works well, but oat flour can substitute both flours for a denser texture.
- You can increase vanilla or cinnamon, or add a touch of almond extract to adjust flavor.
- Lightly spray your waffle iron if it is not non-stick to prevent sticking.
- This batter also makes suitable pancakes with adjusted cooking method.
