  • 1 ½ cups graham cracker crumbs See Recipe Notes, finely ground, approx. 1 package
  • cup white sugar or turbinado or coconut sugar
  • cup olive oil May also substitute melted vegan butter, or melted coconut oil

Instructions

  1. Preheat oven to 375°F.
  2. Mix together the graham cracker crumbs, sugar, and oil until well blended.  Texture should resemble wet sand.
  3. Press mixture into an 8" or 9" pie pan, covering both the bottom and sides of the pan.
  4. Bake 7 minutes.
  5. Make Ahead:Store in the refrigerator up to 3 days before filling, or wrap tightly in plastic wrap and freeze for up to 3 months.

Notes

  • Yield: one 8- or 9-inch pie crust.
  • Graham cracker crumbs can be made by processing crackers in a food processor or crushing them in a sealed bag.
  • For a non-vegan version, substitute olive oil with melted butter in equal amounts.
  • Store the crust in the refrigerator for up to 3 days or freeze for up to 3 months before filling.
