Description
This recipe prepares seasoned jackfruit mixed with olive oil, herbs, garlic, cumin, and chili flakes, then roasts it in a cast iron skillet until crispy and evenly browned. Potatoes are cut, seasoned, and roasted separately until golden and crisp. The jackfruit's texture mimics shredded meat, absorbing the herb and spice flavors well.
Assembly involves warming pita breads, spreading tzatziki, and layering the jackfruit, potatoes, and fresh toppings like tomato, lettuce, vegan feta, and pickled onions. The result combines crisp, soft, tangy, and creamy elements typical of gyros.
Cooked jackfruit keeps up to five days refrigerated but is best fresh. Potatoes should be roasted around 45 minutes for optimal crispness, turning midway. Warming the pita before assembling improves pliability.
Ingredients
For the Jackfruit:
- 2 jackfruit light seasoned; brand: The Jackfruit Co
- lemon save other half for later, juice of half
- 3 tbsp. extra virgin olive oil
- 1 tbsp. thyme dry, seasoning
- 1 tbsp. oregano dry, seasoning
- 3 cloves garlic pressed
- mint thyme or dill, roughly chopped, small handful; fresh
- cumin dash
- chili flakes dash
For the Potatoes:
- 4 potato peel and cut into 1/2 inch X potato length pieces (see photo above for reference, medium sized

For the toppings/assembly:
- 4 pita bread warmed
- tzatziki vegan or regular
- lices tomato
- pieces lettuce fresh
- feta cheese vegan or regular, crumbles
- onion pickled
Instructions
- Preheat oven to 425F and line one baking sheet with parchment and set a large, oiled, cast iron skillet aside.
- Into a large bowl, add your Jackfruit and using a fork mash it up and give it a good stir. You want to ensure there are so large pieces or clumps and the Jackfruit is an even consistency. To the large bowl add the remaining of the Jackfruit ingredients, and stir till well combined. Transfer mixture to a cast iron skillet, flatter it out as much as possible. Pop into the oven and cook for around 40 minutes. At 20 minutes, pull it out and give it a little stir to evenly distribute the crispiness that will be developing.

- Once your Jackfruit and Potatoes are cooked through, crispy and fragrant remove them from the oven and set aside.
- Pop your pita of choice into the oven quickly to warm.
- Assemble your Gyros by first adding Tzatziki to the base of the pita, then some Jackfruit, tomatoes, onion, lettuce, fries and a dusting of fresh herb of your choice. Wrap it all up and enjoy hot with a fresh Greek salad!
Notes
- Cooked jackfruit can be stored in a sealed container in the fridge for up to 5 days but tastes best when fresh.
- Roast potatoes for about 45 minutes or until they're crispy and golden on all sides, turning and moving the pan midway for even cooking.
- Warming pita bread before assembly helps make it flexible and easier to eat.
