Vegan Lemon Buttercream Frosting

This Vegan Lemon Buttercream Frosting is made by creaming plant-based butter with confectioners sugar and fresh lemon juice and zest to produce a thick, fluffy, and tangy frosting. The addition of vanilla extract balances the bright lemon flavor, yielding a frosting suitable for piping onto cakes or cupcakes that carries a slight citrus note without dairy ingredients.

Description

The frosting combines softened vegan butter beaten until smooth, followed by gradual mixing in of confectioners sugar. Lemon juice and zest introduce fresh acidity and citrus aroma, while vanilla extract adds a subtle sweetness and complexity. Beating the mixture thoroughly results in a light, airy texture that holds shape well, making it ideal for decorative piping on baked goods.

Its thicker consistency means it's best suited for frosting details or creating defined shapes rather than spreading freely. The lemon flavor adds freshness that can brighten the taste of cakes, and it complements vanilla or fruity cake bases.

For a smoother or slightly thinner consistency, small amounts of plant-based milk can be added gradually to reach the desired texture without sacrificing structure.
