Description
This recipe creates a vegan take on the classic lobster roll by using hearts of palm as the main ingredient. The hearts of palm are chopped at an angle to introduce varied texture rather than uniform rounds. The rolls are buttered and toasted on a skillet until golden brown, adding a crisp outer layer contrasting the creamy filling. Filling the warm buns with the dressed hearts of palm mixture completes the sandwich.
This sandwich is suitable for those avoiding seafood or animal products, with clear substitutions possible such as extra firm tofu for hearts of palm and a homemade blend for the Old Bay seasoning. The filling can be prepped ahead and refrigerated for up to two days, though it is not recommended for freezing.
Ingredients
- 2 cans hearts of palm drained, 14oz (410g
- 4 tablespoon vegan mayonnaise
- 1 celery diced, stalk
- ¼ red onion diced
- 1 tablespoon chives chopped fresh
- 2 teaspoon lemon juice fresh
- 1 teaspoon Old Bay seasoning see note
- 4 long rolls split at the top
Instructions
- Cut the hearts of palm into chunks. I like to angle the cuts, rather than cut them into rounds so there’s more texture, rather than uniform round slices.
- Mix dressing first. Add the mayo, celery, onion, chives, lemon juice and Old Bay seasoning to a bowl and mix well.
- Add the hearts of palm to the bowl of dressing and gently mix to combine.
- Heat a large skillet or griddle pan over medium heat. Spread the flat sides of the buns with the vegan butter, then fry the buttered sides until golden.
- Fill the rolls with the ‘lobster’ mixture and serve!
Notes
- The hearts of palm mixture can be prepared up to two days in advance and stored in the refrigerator.
- This recipe is not recommended for freezing to maintain texture quality.
- For gluten-free versions, use gluten-free rolls.
- If hearts of palm are unavailable, extra firm tofu cubes can be used as a substitute.
- Old Bay seasoning can be substituted with a blend of smoked paprika, mustard powder, cayenne, salt, and pepper if needed.
