Vegan Mushroom Gravy Recipe

This vegan mushroom gravy combines brown mushrooms, tomato paste, and fresh herbs for a rich, earthy sauce. Cooked with garlic, onion, and a splash of red wine, the gravy is blended smooth and seasoned to taste. It's a plant-based option that can complement various dishes, providing a flavorful alternative to traditional gravy.

Description

The Vegan Mushroom Gravy Recipe uses a base of sautéed onions and browned chopped brown mushrooms, enhanced by garlic and caramelized tomato paste. Adding vegetable stock and red wine creates a robust, savory liquid. Fresh sage, thyme, and rosemary contribute aromatic herbal notes, elevating the depth of flavor. The mixture is blended until smooth, which results in a velvety texture without any dairy or flour thickening agents.

The gravy develops a balanced savory taste with herbaceous accents, offering a meaty feel from the mushrooms. It can be served as a sauce for plant-based roasts, mashed potatoes, or grain dishes. Adjusting the thickness is straightforward by adding more stock if a thinner pour is desired.

To keep leftovers, store the gravy in the refrigerator for up to five days, and reheat gently to maintain its consistency. The recipe notes recommend thinning the gravy with extra vegetable stock if it becomes too thick.

Ingredients

Servings
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 3 cups brown mushrooms chopped
  • 4 cloves garlic smashed
  • 4 tablespoons tomato paste
  • 2 cups vegetable stock more, if you'd like the gravy thinner
  • ¼ cup red wine or stock
  • 2 tablespoons sage chopped, fresh
  • 1 tablespoon thyme fresh leaves only for thyme
  • 1 tablespoon rosemary fresh leaves only for thyme
  • salt to taste
  • black pepper to taste

Instructions

  1. Heat the oil in a large frying pan over medium-high heat. Add the onion and cook for 3-4 minutes, or until it is translucent. Add the mushrooms and cook, stirring occasionally, until they have softened and are starting to brown, about 8 minutes. Add the garlic and tomato paste and let the tomato paste caramelize for a minute, stirring constantly. Add all remaining ingredients and scrape the bottom of the pan to remove any bits that are stuck to the bottom.
  2. Carefully pour the gravy into your blender and blend on high until smooth. Season to taste with salt and pepper.

Notes

  • If the gravy is too thick, thin it by adding more vegetable stock until the desired consistency is reached.
  • Store leftover gravy in the refrigerator for up to five days to maintain freshness.
