Vegan No Bake Chocolate Cookies

These vegan no bake chocolate cookies combine quick oats, peanut butter, and cocoa powder to create a soft, fudgy texture without the need for an oven. The cookies are set by chilling after cooking a hot cocoa mixture with vegan butter, brown sugar, and plant-based milk, which binds the oats as it cools. The rich chocolate flavor and chewy oats make them a satisfying treat that can be prepared quickly without baking, ideal for warm days or when you want a simple dessert.

Description

The Vegan No Bake Chocolate Cookies recipe blends three cups of quick oats with peanut butter and a touch of vanilla for a nutty, slightly sweet base. The chocolatey component comes from heating vegan butter, brown sugar, plant-based milk, and cocoa powder to a rolling boil, then mixing this hot liquid into the oat mixture. This heat activates the sugars and helps bind the oats together upon cooling. The cookies are scooped onto a mat or wax paper and chilled to firm up, resulting in a dense, chewy cookie that doesn't require any baking.

The texture is soft but holds together well thanks to the peanut butter and the cooking of the cocoa syrup. The flavor balances sweetness from the brown sugar with the bittersweet cocoa and the richness of vegan butter. This recipe is convenient for vegan diets and anyone avoiding the oven.

These cookies can be served directly from the fridge as a snack or dessert and are excellent for quick preparation when baking is not desired. They are easy to portion and transport if needed.

Ingredients

Servings
  • 3 cups quick oats
  • ½ cup peanut butter
  • 1 teaspoon vanilla extract
  • salt dash
  • ¼ cup vegan butter
  • ½ cup brown sugar
  • ½ cup plant-based milk any kind
  • 3 tablespoons cocoa powder

Instructions

  1. In a large bowl, add oats, peanut butter, vanilla, and salt. No need to mix yet—wait until the next part is ready.
  2. In a medium saucepan over medium heat, heat vegan butter, brown sugar, plant-based milk, and cocoa powder. Bring to a full rolling boil and set a timer for it to boil exactly 1 minute 30 seconds.
  3. Immediately remove from heat and add to the oats in the large bowl and stir. Immediately use a small serving scooper (about 1/2' circumference) to scoop out onto a silicone mat or wax paper to dry. (If you don't have one, you can use a spoon to scoop it, and another to scoop it off.) Allow to sit in the refrigerator to harden.
