Vegan Pumpkin Chocolate Chip Cookies
Description
Vegan Pumpkin Chocolate Chip Cookies feature a blend of pumpkin puree, vegan butter, and sugars creamed together for a rich, moist dough. A blend of cinnamon, baking soda, salt, and vanilla extract gives gentle spice and leavening. Semi-sweet vegan chocolate chips add pockets of sweetness throughout the thick dough, which is shaped and flattened prior to baking at 350°F. Baking for 12 to 15 minutes yields golden-orange cookies that cool to a firmer yet tender consistency. The lack of spreading calls for flattening each cookie before baking to achieve an even texture.
The flavor combines autumnal pumpkin and warm cinnamon balanced by vanilla and the slight bitterness of chocolate chips. The soft center and lightly crisp edges provide a pleasant chew. This recipe fits well as a holiday or fall treat and can be enjoyed with tea, coffee, or as an everyday snack.
These cookies can be sized smaller or larger with adjusted baking times. They firm up as they cool, so removing from the oven while still slightly soft prevents overbaking. Flattening the dough before baking ensures even thickness.
Ingredients
- 1 cup vegan butter at room temperature
- ½ cup brown sugar
- ½ cup granulated sugar
- 1 cup pumpkin puree
- 1 ½ teaspoon vanilla extract
- ¼ cup applesauce
- ⅛ teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 2 cups all-purpose flour
- 1 cup semi-sweet chocolate chips vegan
Instructions
- Preheat the oven to 350 degrees F (176 degrees C) and prepare a cookie sheet with a silicone mat or parchment paper.
- In a large bowl, mix the vegan butter, brown sugar, and granulated sugar until creamed. Add the pumpkin, vanilla extract, and applesauce and mix well.
- Add the salt, cinnamon, baking soda, flour and mix thoroughly. Fold in vegan chocolate chips and walnuts, if using.
- On the prepared cookie sheet, scoop a generous spoonful of cookie dough and flatten with a spatula.
- Bake for 12-15 minutes, until they turn a golden-orange color.
- Allow to cool before enjoying.
Notes
- Flatten cookie dough on the baking sheet before baking to counteract lack of spread during baking.
- Adjust cookie size and corresponding baking time to produce desired portion sizes.
- Remove cookies from oven when edges are set but centers remain soft, as they will firm up upon cooling.
