Vegan Sweet Potato Pancakes (Gluten-free)

Vegan sweet potato pancakes! Fluffy and soft with a perfect level of sweetness, these make a great easy weekend breakfast or brunch, served with plenty of maple syrup and peanut butter. Gluten-free and oil-free.

  • 2 cups gluten-free oat flour
  • 2 tsp baking powder
  • 1 cup mashed sweet potato
  • 1.5 cups plant milk
  • 3 tbsp maple syrup plus more for serving

Instructions

  1. Whisk together the oat flour and the baking powder. Then, add the mashed sweet potato, plant milk, and maple syrup. Whisk together once more until well-combined. 
  2. Add around 2-3 tbsp of the batter to a hot non-stick frying pan. Cook for around 2-3 minutes, until the edges start to brown. Flip, and cook for a further 30 seconds - 1 minute on the other side. 
  3. Serve the pancakes immediately with maple syrup and other toppings of your choice.
