Description
Vegan Tahini Garlic Pasta uses a sauce combining silken tofu and tahini, blended with plant-based milk, cumin, nutritional yeast, and lemon juice to create a smooth, creamy base. The sauce is warmed and combined with sautéed onion and garlic for savory aromatics. Pasta is cooked until al dente, then mixed with the sauce, adding reserved pasta water to adjust consistency and help the sauce adhere to the noodles.
The result is a hearty vegan pasta with a creamy texture and subtle nutty and citrus notes. This dish can be served as a main course and customized with garnishes of choice for additional flavor or texture variety.
Ingredients
- 7 oz pasta
- 10 oz silken tofu
- ¼ cup tahini
- 1 ½ cups plant-based milk
- ½ tsp cumin
- 1 tsp salt
- ¼ cup nutritional yeast
- ¼ cup lemon juice (juice of 1 lemon)
- 1 tbsp olive oil
- 1 large onion diced
- 2 cloves garlic minced
Instructions
- Cook the pasta according to packaging instructions until al dente. This usually takes around 10-12 minutes. Drain and rinse when done, but retain ½ cup pasta cooking water.
- Add the tofu, tahini, plant based milk, cumin, salt, nutritional yeast and lemon juice to a blender or food processor. Blend until smooth.
- Heat the olive oil in a large frying pan or skillet. Add the onion and garlic, and cook for 5 minutes, until softened and fragrant.
- Pour in the sauce and stir thoroughly, before adding the pasta and pasta water. Divide between plates/bowls and serve with garnishes of your choice!
