Description
The recipe starts with optionally marinating firm tofu in soy sauce to add depth to its mild flavor. The chickpea flour is mixed with spices including paprika, cumin, coriander, turmeric, and salt, then blended with plant-based milk to create a smooth batter without lumps. The tofu slices are individually coated in all-purpose flour first to help the batter adhere. Next, they are dipped in the batter and coated with breadcrumbs, forming a textured crust.
Pan-frying in oil until golden ensures a crispy coating, while the tofu inside remains soft. Removing the schnitzels to paper towels drains excess oil for a less greasy finish. Ingredients
- 450 g tofu
- 2 tablespoon soy sauce optional to marinate the tofu
- ¾ cup chickpea flour
- 1 teaspoon paprika sweet
- ½ teaspoon cumin
- ½ teaspoon Coriander
- ¼ teaspoon Turmeric
- ½ teaspoon salt
- ¾ cup plant-based milk
- ¼ cup all-purpose flour
- 1 cup breadcrumbs
Instructions
- *Optional. You can leave the tofu marinating with soy sauce while you prepare the rest of the ingredients.
- Combine the chickpea flour with the spice mix and the plant-based milk or water.
- Whisk to get a smooth batter. If there are lumps, you can use a blender for a couple of seconds.
- Slice the tofu block in four pieces using a sharp knife.
- Place the all-purpose flour in a plate and the breadcrumbs in another plate.
- Coat one tofu slice with all-purpose flour, then transfer to the bowl with the chickpea flour batter, and last, coat with breadcrumbs.
- Heat some oil using a shallow pan, add the tofu schnitzel, and cook until golden brown.
- Flip and cook on the other side.
- When crispy, transfer to a paper towel to release any excess oil.
- Serve with some potatoes, a green salad and lemon wedges to squeeze some fresh lemon juice.
