Vegan Whipped Cream
Description
Vegan Whipped Cream uses full-fat coconut milk canned and refrigerated overnight to solidify the thick cream portion. Pouring off the separated water leaves the cream which is whipped until light and fluffy with a hand mixer. Vanilla extract and sugar are then folded in for flavor and sweetness.
The result is a soft, billowy cream with the richness of coconut fat and the sweetness balanced by sugar. This method avoids dairy ingredients and relies solely on carefully chilled coconut milk without additives like guar gum, which can inhibit whipping.
This whipped cream works as a suitable dairy-free topping for cakes, pies, hot drinks, or fruit. Its texture is similar to traditional whipped cream but with a mild coconut undertone.
Choosing coconut milk without guar gum is important to achieve the proper aeration and fluffiness. The separated coconut water can be repurposed in smoothies, cooking, or beverages instead of discard.
Ingredients
- 1 can coconut milk 13.5 ounce, full-fat
- 2 teaspoon of vanilla
- sugar ~3 to 4 tablespoons, to taste
Instructions
- Refrigerate the can of coconut milk overnight.
- Carefully open the can of coconut milk, and slowly dump out the water.
- What should be left in the can is the cream. Pour this into a bowl and whip on high with a hand mixer for 5-7 minutes or until it becomes fluffy. Mix in the vanilla and sugar.
Notes
- Use canned coconut milk without guar gum to ensure the cream whips properly.
- The separated coconut water can be saved for smoothies, cooking, or drinking.
