Vegetable Five Spice Tofu Stir-Fry

This Vegetable Five Spice Tofu Stir-Fry combines julienned tofu and a mix of fresh vegetables lightly seasoned with five spice powder and brightened with Shaoxing wine and soy sauce. The tofu is stir-fried until slightly crisp then returned to the pan with the vegetables, resulting in a dish with varied textures and a savory, subtly spiced flavor profile. The use of both fresh and reconstituted mushrooms adds depth to the stir-fry, which can be served as a main or side dish.

Description

The recipe starts by julienning tofu and a selection of vegetables including celery, king oyster mushrooms, reconstituted shiitake mushrooms, carrot, and red bell pepper. The tofu is stir-fried separately until it gains a slight crispness, then set aside. Next, the vegetables are stir-fried in two stages with a pinch of sugar to balance flavors. The tofu is then returned to the wok along with Shaoxing wine, salt, five spice powder, white pepper, and soy sauce, cooking together for several more minutes.

This method offers a balance between tender vegetables and tofu with a gentle aromatic quality from five spice powder. The soy sauce and Shaoxing wine provide umami and a hint of acidity. The dish delivers a combination of textures from the crisp celery and tender mushrooms, enhanced by the mildly sweet and savory seasoning.

The stir-fry can be served hot as a light main or a vegetable side. Its moderate seasoning allows it to pair well with rice or noodles for a complete meal.
