Description
This Vegetarian Fajitas recipe starts by heating vegetable oil and cooking a mix of sliced red, orange, yellow bell peppers, poblano peppers, button mushrooms, and thinly sliced red onion over high heat. The vegetables soften while developing some char that contributes smoky flavor. Garlic is added near the end for an aromatic touch.
A seasoning blend of chili powder, ground cumin, onion powder, and smoked paprika is sprinkled over the cooked vegetables and cooked further for a few minutes, allowing the spices to blend well. Fresh cilantro is stirred in just before serving to add brightness and herbal notes.
Fajitas can be assembled by spooning the vegetable mixture onto warmed corn or flour tortillas and topped with accompaniments such as rice, beans, sour cream, salsa, or guacamole, according to preference. Lime wedges add optional acidity that brightens the flavors.
Ingredients
- 2 tablespoons vegetable oil
- 2 1/2 cups bell pepper red, orange, yellow or a combination, sliced
- 3/4 cup poblano pepper sliced
- 8 ounces button mushrooms sliced
- 1 cup red onion thinly sliced
- 2 teaspoons garlic minced
- 2 teaspoons chili powder
- 3/4 teaspoon cumin ground
- 1/4 teaspoon onion powder
- 3/4 teaspoon smoked paprika
- salt to taste
- black pepper to taste
- 2 tablespoons cilantro chopped
- lime optional, wedges for serving

Instructions
- Heat the oil in a large pan over high heat. Add the peppers, mushrooms and onion to the pan and cook, stirring occasionally, until vegetables are tender and charred on the edges. Season the vegetables with salt and pepper.
- Add the garlic and cook for 30 seconds.
- Sprinkle the chili powder, cumin, onion powder and smoked paprika over the vegetables.
- Cook for another 2-3 minutes, stirring occasionally.
- Sprinkle the cilantro over the top and serve. Garnish with lime wedges if desired. Serve the tortillas and toppings on the side.
