Vegetarian Portobello Mushroom Gyros

The mushrooms are seasoned with soy sauce, lemon, garlic, oregano, and smoked paprika, then cooked until tender and browned to develop a savory bite. The assembly includes sliced tomato, red onion, radish, lettuce, and salty feta cheese, adding freshness and contrast. This recipe offers a satisfying vegetarian alternative to traditional gyros, ideal for a flavorful handheld meal.

Description

The Vegetarian Portobello Mushroom Gyros feature portobello caps sliced and marinated in a mixture of olive oil, soy sauce, lemon juice, garlic, oregano, smoked paprika, salt, and pepper. After marinating, the mushrooms are cooked in a skillet until they are softened and develop a deep brown color, bringing out their earthy richness. Tzatziki sauce is spread on pita bread, which is then layered with the cooked mushrooms, fresh vegetables such as tomato, red onion, radish, and lettuce, and topped with crumbled feta cheese. The combination of the savory mushrooms and fresh, crisp toppings wrapped in soft pita bread creates a balanced meal with both texture and flavor.

These gyros can be served immediately after assembly, making them convenient for lunch or a casual dinner. The recipe highlights how portobello mushrooms can substitute meat in gyros while maintaining a satisfying texture and flavor.

To prevent pita breads from cracking when folded, warming them covered with a moist paper towel in the microwave for 20 to 30 seconds is recommended. Assemble the gyros right after warming for best results.
