Vegetarian Stuffed Cabbage Rolls
Description
This recipe uses green cabbage leaves blanched or frozen previously, then carefully trimmed and cored to remove tough parts. The filling consists of cooked white rice combined with sautéed diced onions and grated carrots cooked in olive oil until golden. Some of these vegetables are reserved to layer on top of the cabbage rolls before baking.
The filled cabbage leaves are rolled to enclose the vegetable and rice mixture, forming cone-shaped parcels. They are arranged snugly in a baking dish, topped with the reserved sautéed vegetables, and baked at moderate heat. This gentle baking softens the cabbage while allowing the filling to meld with the subtle sweetness and texture of the vegetables.
The result is a vegetarian main or side dish with soft cabbage leaves enclosing a savory-sweet rice and vegetable filling. This dish can be enjoyed as-is or with a sauce added before baking if desired.
Ingredients
- 1 green cabbage frozen prior, read notes above, large
- 6 cups white rice cooked
- 4 onion thinly diced, large
- 5 carrot grated, large
- 3 tbsp olive oil
- 2 tbsp salt adjust to taste
- 1 tsp black pepper adjust to taste, ground
Instructions
- In a large skillet, saute the carrot and onions in olive oil until golden brown. Set aside 1/4 of the veggies for topping your cabbage rolls.
- Combine the rest of the sauteed veggies with the cooked rice and set aside.
- Remove the leaves from the defrosted cabbage head.
- Cut out the tough core from each cabbage leaf.
- Place the cabbage leaf in your hand and add a spoonful of the filling.
- Fold over one side of the cabbage leaf, securing the filling inside and creating somewhat of a cone shape.
- Push the loose leaves inside the roll. Repeat until you run out of ingredients.
- Assemble the cabbage rolls next to one another in a baking dish. Cover them with the remaining sautéed veggies. (Optional: top with sauce if desired, see notes above.)
- Bake at 350°F for 30-45 minutes. Enjoy!
