Veggie Lo Mein (Under 30 Minutes)
Description
In this Veggie Lo Mein recipe, the sauce blends vegetable broth, soy sauce, brown sugar, and sesame oil for a subtly sweet and savory coating. Vegetables including carrots, broccoli, red bell pepper, onions, and garlic are cooked individually in a hot skillet with neutral oil to develop distinct textures and flavors without overcooking.
After the vegetables are combined, cooked lo mein noodles are added along with the sauce. Tossing everything together over heat allows the noodles to absorb the sauce and the garlic aroma to infuse the dish. Cooking all components separately before combining ensures each vegetable retains its integrity rather than becoming mushy.
This dish works well as a quick vegetarian main or side and can be served immediately for best texture. The combination offers a range of colors, textures, and mild savory-sweet flavors typical of classic lo mein preparations.
