Description
This meal prep recipe for Vietnamese Grilled Chicken includes chicken breasts halved and marinated in a blend of lemongrass, minced shallot, soy sauce paste added in two stages, garlic powder, and neutral cooking oil. The layering of soy sauce enhances the marinade’s depth. After resting in the fridge for at least 30 minutes or overnight, the chicken is grilled, with leftover marinade brushed on during cooking to intensify flavor and keep the meat moist.
The grilled chicken pairs well with mixed greens, steamed rice, and pickled carrots for balance. Pickled carrots are prepared by soaking spiralized large carrot pieces with sugar, salt, rice wine vinegar, and water overnight, lending a crisp, tangy contrast. The scallion garnish, microwaved briefly with sugar and oil, adds subtle sweetness and aroma.
This combination presents a harmonious mixture of savory, aromatic, sweet, and tangy elements typical of Vietnamese cuisine. It is well suited for make-ahead lunches or dinners, providing colorful and layered flavors within a convenient meal prep format.
Ingredients
- 2 tbsp lemongrass thinly sliced
- 1 shallot minced
- 6 tbsp soy sauce 3 tbsp first then 3 again, paste form
- 1 tsp garlic powder
- 1 tbsp neutral cooking oil generic cooking oil
- 2 chicken breast halved into 4
To Serve / Optional

Instructions
- In a bowl, mix together the lemongrass, shallot, 3 tbsp (half) the soy sauce paste, garlic powder, and oil. Once everything is fully coated, add the rest of the soy sauce. (You can put all the soy sauce in at once if you'd like but I prefer mixing half first)
- Set aside a spoonful or two of the marinade on the side to use to brush onto the chicken while grilling later.
- Coat your chicken with the rest of the marinade and let it marinade in the fridge for 30 minutes or overnight.
- Once ready, place the chicken onto the grill and grill each side for 6 minutes or until the chicken is cooked through. Brush on the sauce that was set aside onto the chicken if needed.
- Serve with your favourite sides, I choose mixed greens, rice, pickled carrots, and a scallion garnish.
Notes
- Pickled carrots can be prepared by soaking spiralized carrots overnight in sugar, salt, rice wine vinegar, and water; they keep up to a week refrigerated.
- The scallion garnish is made by mixing sliced scallions with sugar and oil, then microwaving for 30 seconds to soften and sweeten.
