Vietnamese Ground Pork in Tomato Sauce (Thịt Băm Sốt Cà Chua)
Description
Vietnamese Ground Pork in Tomato Sauce (Thịt Băm Sốt Cà Chua) combines ground pork with fresh tomatoes, onions, garlic, and shallots, simmered together to create a thick, flavorful sauce. The pork is seasoned with fish sauce and black pepper, lending depth and a subtle umami taste. Optional ingredients like chili flakes and tomato paste can enhance heat and richness. The tomatoes break down over cooking, providing a soft, saucy texture that coats the bite-sized pork pieces well.
The sauce is cooked over medium heat and allows flavors to develop during a gentle simmer. Finishing with chopped scallions adds a fresh, mild onion note. This dish is typically served over steamed rice, but it can also complement salads or noodle dishes, offering flexibility in meals.
The recipe is straightforward, making use of common ingredients and simple techniques. Optional stock or water can be added to adjust the thickness. The dish is best enjoyed fresh to appreciate its tender texture and balance of savory and slightly tangy flavors.
