Description

This recipe begins by soaking gummy bears in vodka, covered and left at room temperature for 24 to 72 hours. The soaking time affects how much vodka the candies absorb and how much they swell in size. After soaking, the gummy bears need to be separated and strained. A portion of them is placed in popsicle molds and covered with soda such as Sprite (or ginger ale or Fanta) to just cover the candy.

The molds are then frozen until the first layer sets, about 60 to 90 minutes. Wooden sticks are inserted, and another layer of soaked gummy bears and soda is added. This process repeats to create three layers total, with freezing between layers. The total time needed is around four or more hours.

The final popsicles offer a combination of cold bubbles and alcoholic gummy centers that can be enjoyed as a novelty adult treat. The texture is a mix of chewy, alcoholic gummy bears and sweet, fizzy soda frozen into a popsicle form.

For a non-alcoholic version suitable for children, omit the vodka and soaking step and proceed as usual.

  • 1 1/4 cup vodka
  • 1 1/4 cup gummy bears
  • 3 cups Sprite ginger ale or Fanta! work well too
  • Wooden popsicle sticks

Instructions

  1. Pour the vodka in a bowl. Add the gummy bears, cover, and allow them to soak for 24-72 hours. The longer the gummy bears soak, the more vodka they absorb. They also grow in size!
  2. Once the gummy bears have soaked to your liking, stir to separate them. Then strain one-third of them out of the vodka and place in the bottom of 10 popsicle molds. Pour Sprite over the gummy bears until just covered, about one-third full. Then place in the freezer for 60-90 minutes.
  3. Once the first layer is frozen, add the popsicle sticks and add a second layer of strained gummy bears and soda. Freeze again and repeat a third time. The total layering/freezing process should take around 4+ hours.

Notes

  • Soak gummy bears in vodka between 24 to 72 hours; longer soaking results in stronger absorption and larger gummies.
  • Allow popsicles to freeze sufficiently between layering to maintain distinct layers and proper texture.
  • For a kid-friendly version, skip vodka and soaking, using only soda and gummy bears.
