Wacky Cake

Wacky Cake is a simple, moist chocolate cake made without eggs or dairy. The recipe uses pantry staples like all-purpose flour, sugar, cocoa powder, and vinegar to create a rich texture and balanced flavor. This no-fuss cake is baked right in the pan it's mixed in, making cleanup easy and the process straightforward.

Description

Wacky Cake relies on basic ingredients such as flour, sugar, and cocoa powder combined with vegetable oil, vinegar, and vanilla extract to produce a moist and tender chocolate cake. The vinegar reacts with the baking soda to provide leavening, compensating for the absence of eggs. The cake is mixed directly in an ungreased pan by creating wells in the dry ingredients to add the wet ones, then stirred until smooth and baked at 350°F until a toothpick comes out clean. Once cooled, it's dusted with powdered sugar for a simple finish.

This cake works well as a quick dessert that can be made with minimal ingredients and no eggs, making it suitable for those with certain dietary restrictions or ingredient shortages. It pairs nicely with a scoop of ice cream or fresh fruit.
