Waffled Crab Cakes

Waffled Crab Cakes offer a crispy exterior and tender interior by cooking flavorful crab and panko patties in a waffle iron. The mixture combines lump crab meat with herbs, spices, and binding ingredients to create a delicate texture that crisps evenly in the waffle iron, producing an unusual but effective preparation for crab cakes that cooks quickly and evenly.

Description

This recipe blends fresh lump crab meat with panko crumbs, eggs, mayonnaise, Dijon mustard, herbs like chives and parsley, lemon juice, Old Bay seasoning, paprika, and optional Tabasco for a hint of heat. The mixture is handled gently to preserve the crab's texture and shaped into patties around half a cup each.

Cooking the crab cakes in a preheated and oiled waffle iron creates crispy edges while keeping the center moist and flavorful. This method enhances the cakes with an even, golden crunch on all sides and cooks them efficiently. They are served hot with lemon wedges to add a fresh acidic note that complements the seafood taste.

Ingredients

Servings
  • 9 ounces crab meat shell pieces removed, lump
  • 1/2 cup panko crumbs (plain or gluten-free*)
  • 1 egg beaten, large
  • 1 egg large, white
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 tablespoons chives chopped
  • 2 tablespoons parsley fresh, minced
  • 1 tablespoon lemon juice fresh
  • 1/2 teaspoon Old Bay seasoning
  • 1/8 teaspoon paprika
  • Tabasco sauce optional, few dashes
  • 1/8 teaspoon kosher salt
  • black pepper (to taste)
  • cooking spray (I use a mister)
  • 4 lemon for serving, wedges

Instructions

  1. In a large bowl, combine the panko crumbs, egg, mayonnaise, dijon, chives, parsley, lemon juice, Old Bay, paprika,  tabasco, salt and pepper. Mix well, then fold in crab meat, careful not to over mix.
  2. Gently shape into round, flattened patties with your hands, about 1/2 cup each. Makes 4 patties.
  3. Heat the waffle iron on high, spray with oil.
  4. Place one in the center and close gently, cook until the edges are golden, about 2 1/2 to 3 minutes.
  5. Serve with lemon wedges.
