Description
This casserole begins by browning ground beef with diced onions, then combining it with black beans, salsa, and taco seasoning for a spicy, savory filling. The mixture is spread in a baking dish and layered with cheddar and Monterey Jack cheeses. A layer of corn chips adds crunch and texture, topped again with cheese that melts to bind the ingredients and crisp the chips.
The dish can be served with fresh toppings like shredded lettuce, diced tomatoes, jalapeños, cilantro, and lime wedges for brightness and contrast. It suits casual meals or gatherings, providing all taco components in a baked form without assembling individual tacos.

Ingredients
- 1 pound ground beef
- ½ cup red onion finely diced
- 1 can black beans 15 oz can - drained and rinsed
- ½ cup salsa
- 2 Tablespoons taco seasoning
- ½ bag corn chips 9.25 oz. bag, brand Fritos
- 1 cup cheddar cheese shredded
- 1 cup Monterey jack cheese shredded
- Optional toppings:
- lettuce shredded
- diced tomatoes
- jalapeño sliced
- cilantro chopped
- lime wedges
Instructions
- Preheat the oven to 350 degrees F and spray a 9X9 baking pan with non stick cooking spray.
- Brown the ground beef with the red onions in a large skillet over medium high heat. Drain off any excess grease.
- Stir in the black beans, salsa and taco seasoning. Heat for 2-4 minutes until the mixture is heated through.
- Pour the beef mixture into the baking pan. Top with half of each of the cheese.
- Then top with the corn chips and the remaining shredded cheese.
- Bake for 15-20 minutes or until the cheese is melted.
- Let sit for 5 minutes. Then serve with your favorite toppings and enjoy!
Notes
- You may substitute any preferred type of beans for the black beans in this recipe.
- Store leftovers in an airtight container in the refrigerator for up to 5 days to maintain freshness.
