Warm Antipasto Platter Pasta

Ingredients
- 1 box chickapea pasta (any shape you prefer)
Sweet Basil Balsamic Sauce:
- 1-2 garlic cloves
- 1/4 cup basil 6 g, fresh leaves
- 2 tablespoons parsley 5 g, fresh leaves
- 1 tablespoon capers 9 g
- 2 teaspoons honey 20 g
- 1/3 cup balsamic vinegar 80 ml
- chilli flakes optional, pinch
- 1/4 cup Parmesan Cheese 20 g, grated
- 1 teaspoon anchovy paste ( or 2 anchovy fillets)
- 1/4 cup olive oil 70 ml
- 1/8 teaspoon salt (more or less to taste)
- 1/2 teaspoon black pepper more or less to taste, freshly cracked
Antipasto Toppings: (any or all )
- 1 cup watercress 40 g, packed leaves
- 1 cup heirloom tomatoes 170 g, baby size
- 1/2 cup mushroom 80 g, marinated
- 1/3 cup artichokes 50 g, grilled
- 1 cup bocconcini cheese 180 g
- 1/4 cup Parmesan Cheese 30 g, shavings
- 1/4 cup mini sweet peppers 30 g, marinated
- 1/4 cup olives 40 g, marinated
- 1/2 cup salami 100 g, sliced, or prosciutto
Notes
- You can serve this antipasto platter warm or cold. So not only is it great for the BBQ, think picnics and beach food, potlucks and any outdoor fun.
- Also, you can make different versions of it every time and it’ll feel almost like a new recipe with every variation you make to it!
- I personally prefer no meats added to this pasta, but if you’re into salami and cold cuts, you'll find it might taste even better!
