Warm Antipasto Potato Salad Recipe

Ingredients

  • 1 ½ pound potato I used Blushing Belles, Little Potato Co. Creamer variety
  • 12 grape tomatoes cut in half
  • ½ cup artichoke heart each cut in half, canned, quarters
  • 2 ounces provolone cheese cut into small squares
  • 1 ounce salami cut into strips, sliced
  • 1 roasted red pepper chopped
  • 3 tablespoons green olives sliced
  • 2 tablespoons parsley flat-leaf, minced

The Dressing:

  • 1 ½ tablespoons extra virgin olive oil
  • 1 ½ tablespoons white wine vinegar
  • ½ teaspoon kosher salt
  • ¼ teaspoon oregano dried

Instructions

  1. Cut the Creamer potatoes in half and place in a large saucepan. Cover with cold water by an inch. Bring to a boil. Cook until the potatoes are tender, but not falling apart, about 20 minutes. Drain.
  2. Transfer the potatoes to a large bowl and toss with the dressing.
  3. Add the tomatoes, artichoke hearts, cheese, salami, roasted red pepper, olives and parsley. Stir to combine. Serve warm or at room temperature.

The Dressing:

  1. In a small bowl, whisk together the olive oil, vinegar, salt and oregano.
