Watergate Salad Recipe
Description
The Watergate Salad Recipe blends the sweetness and juiciness of crushed pineapple (including juice) with pistachio instant pudding mix to provide signature flavor and color. Miniature marshmallows add softness and a subtle chew, while chopped pecans and flaked coconut contribute crunch and complexity.
Once the dry ingredients are combined with the pineapple, the whipped topping is folded in to create a creamy, aerated texture. Refrigerating for several hours or overnight allows flavors to meld and the salad to firm up. Serving it chilled enhances the refreshing character.
This salad is commonly served as a dessert or side dish during holiday meals and potlucks. It pairs well with heavier entrees to provide a sweet contrast and can be garnished with additional whipped topping or maraschino cherries for presentation.
Ingredients
- 20 ounces pineapple crushed, with juice, undrained
- 1 .4-ounce package pistachio instant pudding mix
- 1 cup miniature marshmallows
- 1/2 cup pecans chopped
- 1/2 cup coconut flaked
- 1 ounce container whipped topping thawed
Instructions
- In a large bowl combine the first 5 ingredients.
- Stir in the whipped topping.
- Refrigerate for at least 4 hours. I recommend refrigerating overnight.
- Serve with additional whipped topping and a maraschino cherry. (optional)
Notes
- This salad pairs well with holiday dinners including turkey, green bean casserole, and cornbread dressing.
- Refrigerate the salad for several hours or overnight to meld flavors and improve texture.
