Description

These popsicles begin by blending fresh seedless watermelon flesh into a smooth puree, which is partially frozen to start firming up the base layer. Separately, peeled kiwi fruit is pureed with honey to add brightness and a touch of sweetness. Once the watermelon layer is semi-frozen, the kiwi puree is added on top before inserting sticks to freeze fully.

The resulting popsicles have a fresh and fruity flavor profile combining the natural sweetness and mild watery texture of watermelon with the tart and slightly tangy kiwi. Honey adds extra sweetness but can be adjusted to taste. The preparation method, including the initial partial freeze of the watermelon, prevents the layers from mixing completely, preserving two distinct fruit flavors in each popsicle.

The popsicles can be unmolded easily by briefly dipping the molds in hot water. Care should be taken not to melt the popsicles during removal. These treats provide a cooling, summery option using whole fruits without added preservatives or artificial flavors.

  • 1/2 watermelon small, seedless
  • 4-5 kiwi
  • 1 tsp honey or more to taste

Instructions

  1. Remove the flesh from the rind of the watermelon and cut into large chunks. Process in a food processor or blender until smooth. Pulse to get any remaining chunks. You'll need 2 cups of puree.
  2. Fill each of 10 popsicle molds about 3/4 full with the watermelon juice. Set in freezer for 30 minutes to firm up.
  3. Meanwhile peel the kiwi and cut into chunks. Puree in the same manner. Add the honey to taste. You'll need a cup of puree.
  4. Fill each of the popsicle molds to the top with the kiwi puree, and then insert a stick into each slot. The mixture will be thick enough that the sticks will stand up by themselves. Freeze until the popsicles are solid, about 4 hours or more.
  5. To remove, fill your sink with hot tap water and immerse the mold up to, but not over the top lip for about 5 seconds. If the popsicles don't budge, immerse for a few seconds more. Note: don't leave in the hot water too long or the pops will start to melt.
