Watermelon Margarita Popsicles
Description
Watermelon Margarita Popsicles are made by blending cubed watermelon with fresh lime juice, tequila, and pink Himalayan salt to create a smooth mixture. Poured into popsicle molds, they freeze first partially, then lime slices are suspended inside before freezing solid. The finished popsicles feature sweet, juicy watermelon flavor brightened by lime and balanced with a subtle salty hint. The tequila adds a mild adult kick, which can be swapped out for lemonade to make a family-friendly version.
The texture of the pops is smooth and icy, enhanced by the natural sweetness of watermelon and tartness of lime. Freezing in stages allows the lime slices to stay suspended and adds an attractive element to the popsicles. Using seedless watermelon and cutting the fruit into smaller cubes helps achieve a smoother puree.
This frozen treat is perfect for cooling down on warm days and can be served straight from the mold. Variations include using other fruits like mango or strawberry, or layering different fruit purees for colorful popsicles. It is recommended to blend gradually from slow to high speed for best results and try rum as a tequila substitute for a different flavor style. A single popsicle has 1 Blue Plan SmartPoint.
