Crisp and refreshing, these Wedge Salad Bites are bursting with creamy blue cheese and smoky bacon flavors

Ingredients
- ½ head iceberg lettuce cut into bite size wedges
- 1 cup cherry tomatoes
- ½ cup blue cheese dressing
- 5 lices uncured bacon cooked and chopped
- ¼ cup red onion cut into small pieces
- ¼ cup Blue cheese crumbles
- 1 tablespoon fresh chives chopped
- ½ teaspoon salt
Instructions
- Fry bacon in a skillet, then allow to cool on paper towels. Chop into small pieces, then set aside.
- Wash, dry and cut lettuce into small wedges.
- Insert a 4” party skewer into a cherry tomato, then into a mini iceberg wedge, then set on a platter.
- Drizzle blue cheese dressing over the lettuce.
- Sprinkle the chopped bacon, red onion and chopped chives over each wedge.
- Top with salt and finish with blue cheese crumbles, then serve.
