Description
This recipe starts by toasting bread on one side only, providing a crisp base for the cheese mixture. The cheese sauce is made by gently melting sharp cheddar with butter, mustard, Worcestershire sauce, and flour, then thinning with Guinness beer to form a smooth, slightly thick paste. The mixture is poured over the untoasted side of the bread, and placed under a broiler or grill to brown and bubble slightly for a golden finish.
Welsh Rarebit is best served immediately while the cheese topping is molten and still warm. It can serve two smaller appetites as a casual, snack-like meal. The robust flavors from the cheddar and savory seasonings make it a comforting dish with a rich and creamy texture.
Ingredients
- 4 oz cheddar cheese (strong/mature)
- 2 tsp butter
- 1 tsp Worcestershire sauce
- 1 tsp English mustard or French or a mild German
- 1 tsp flour
- 3 Tbsp Guinness beer
- 2 lices bread
Instructions
- Toast the bread on one side only (use a broiler/grill if your toaster doesn't have this function).
- Put all of the ingredients, except for the toast and Guinness, into a pan, with the butter at the bottom, and place over a low heat.
- Add the Guinness, then stir to combine the ingredients. Don't worry if you think it's too dry, the cheese mixture won't be very wet.
- Preheat the broiler/grill at this time.
- Continue to stir the cheese mixture until a smooth paste forms, then pour over the untoasted side of the slices of bread.
- Place on a baking tray and put under a preheated broiler/grill for a minute or so or until golden brown. Serve immediately.
Notes
- This recipe portion is suitable for two smaller servings.
