West African Ground Nut Stew

Groundnut Stew is a simple West African dish that the whole family will enjoy. This mild African stew is made with veggies, yams, and creamy peanut butter.

Ingredients
- 1 rotisserie chicken or whole smoked chicken
- 1.5 cups peanut butter creamy
- 4 cups chicken broth
- 15 ounce tomato sauce canned
- 2 yams True Yams preferred over Sweet Potatoes, peeled and cut into ½ inch chunks
- 1 yellow onion diced
- 2 tomato diced
- 5 garlic minced, cloves
- 3 Tablespoon ginger chopped
- 1 jalapeño diced
- 3 Tablespoons palm oil may substitute olive oil or canola oil
- peanuts optional topping, crushed
- egg optional topping, hard boiled, sliced
Instructions
- Heat the oil over medium-high heat then saute the onion, garlic, and jalapeno until soft and translucent..
- Stir in the yams and ginger, and stir. Cook for about 1 minute.
- Add the tomato sauce, diced tomatoes, chicken broth, and peanut butter. Increase heat to med-high and bring to a boil, then add the chicken and reduce to simmer.
- Simmer to desired consistency. Serve on top of rice and top with crushed peanuts and slice hard boiled eggs.
