Description

Whipped Chocolate Ganache Frosting is created by pouring nearly boiling heavy cream over finely chopped, good quality chocolate and allowing it to stand for a few minutes. Stirring these together results in a smooth, shiny ganache. After cooling the ganache to room temperature—either by resting or spreading thinly to speed the process—it is whipped in a stand mixer until it becomes light and fluffy.

This frosting has a creamy texture that holds shape well for piping or spreading. Its richness is provided by the high chocolate content combined with the smooth mouthfeel of whipped cream. It can be used on cupcakes, as a cake filling, or a frosting layer depending on quantity.

The recipe quantity is enough for about 18 cupcakes with piping or 24 with spreading. Doubling the recipe is advised if using for both filling and frosting a cake. This frosting pairs well with a variety of cake flavors to add a chocolate dimension without heaviness.

  • 8 oz chocolate chopped into small pieces, good quality
  • 1 cup heavy cream

Instructions

  1. Chop chocolate and place into large bowl. Heat cream in the microwave until nearly boiling. Pour hot cream over chocolate and let stand 5 minutes.
  2. Stir until everything is completely melted, smooth and shiny to create a ganache. Set aside 2 hours to cool completely to room temperature.Pro tip: cool your ganache faster by pouring onto a clean baking sheet and spreading out to be 1 1/2 inches thick. It should be completely cooled after 45 minutes to 1 hour.
  3. Transfer the ganache to a stand mixer and whip until light and fluffy. Use as desired.

Notes

  • The frosting quantity covers 18 cupcakes with a piping bag or 24 with spreading by a knife.
  • Double the recipe if using it as both a cake filling and frosting to have sufficient coverage.
