Description
Whipped Frosting is a creamy, fluffy topping made by first thickening milk and flour over heat to create a custard-like base. Once cooled, this base is mixed with butter and sugar that have been beaten until light and smooth, adding vanilla extract for flavor. The resulting frosting is silky with a fine texture due to the proper blending of sugar and butter. It can be used immediately for a softer consistency or chilled to firm up slightly before spreading on baked goods.
The process ensures the flour is well incorporated without lumps before cooling, which is key to achieving the desired whipped texture after mixing with the butter. This frosting is especially suitable when a stable yet soft topping is preferred over traditional buttercream.
For a brighter white appearance, clear vanilla can be used, and adding food coloring during mixing allows easy customization of frosting color. Using salted butter is typical, but if unsalted butter is chosen, including a small amount of salt helps balance the flavor.
Ingredients
- 1 1/2 cups milk
- 1/4 cup all-purpose flour
- 1 1/2 cups granulated sugar
- 1 1/2 cups butter softened
- 2 teaspoons vanilla extract
Instructions
- Add the milk and flour to a medium sauce pan over medium heat and whisk well. Keep whisking over medium to high heat, until the mixture begins to thicken to the consistency of a gravy or pudding. Remove the saucepan from heat and allow the mixture to cool.
- While the flour and milk mixture is cooking, beat together the butter and sugar in a large bowl with an electric mixer. Beat well, at least 5 minutes. Make sure sugar and butter is well combined or your frosting will be a bit grainy. Beat in the vanilla until combined.
- Add the cooled flour mixture to the bowl and beat together until light and fluffy.
- Use frosting immediately or, if you prefer a stiffer frosting, refrigerate for 30 minutes before use.
Notes
- Use clear vanilla for a bright white frosting, or regular vanilla when adding color.
- Add food coloring when combining the cooled flour mixture with the butter mixture for even color.
- Salted butter works well in this recipe; if using unsalted butter, add 1/4 teaspoon of salt.
