Whipped Shortbread Cookies (Cookie Press)

Whipped Shortbread Cookies made using a cookie press create delicate, buttery cookies with a light and soft crumb. The dough is prepared by creaming butter and powdered sugar, then mixing in cornstarch, salt, and flour. Pressed into decorative shapes, these cookies bake to a tender texture with crisp edges, ideal for serving with tea or coffee.

Description

The Whipped Shortbread Cookies recipe begins by creaming butter until light and fluffy, which ensures an airy texture. Powdered sugar and vanilla extract are incorporated to add sweetness and aroma. Incorporating cornstarch and a pinch of salt along with all-purpose flour produces a dough that’s tender yet holds shape well when pressed through a cookie press.

The dough is portioned using the cookie press onto an ungreased pan to form patterned cookies, which bake in about 9 to 11 minutes until set but not browned. Cooling on a wire rack preserves their delicate crumb texture. The cornstarch contributes to the cookie's characteristic shortbread softness.

These cookies can be decorated with sprinkles or colored sugar before baking to add a festive touch. They work well as a simple, buttery accompaniment for hot beverages or as a light dessert cookie.

If a cookie press is not available, the dough can be shaped into small balls about ¾ inch diameter and pressed flat with a fork to create a similar effect.
