Ingredients

  • 1 onion large, chopped
  • 3 carrot peeled and chopped
  • 3 celery chopped, sprigs
  • 8 oz mushroom I used cremini portobello and shitake, mixed varieties
  • 2 - 19 oz cannellini beans drained and rinsed, canned
  • 3 Quarts chicken stock 12 cups, or vegetable stock
  • 1/4 cup barley uncooked
  • 3 Tablespoons celery leaves chopped
  • 2 tablespoons dill chopped, fresh
  • salt
  • black pepper
  • 2 Teaspoons olive oil

Instructions

  1. In a large pot heat the olive oil over medium heat
  2. Add the onions and cook until softened, 2-3 minutes. Add some salt and pepper
  3. Add the carrots and celery. Cook for 2-3 minutes more
  4. Add the mushrooms and cook until softened
  5. Pour in the stock, the beans and the barley
  6. Simmer the soup until beans have softened and barley is cooked. About 20 minutes
  7. Add the herbs and cook for 2-3 minutes more
  8. Check the seasoning and make the necessary adjustments
