White Bean and Sausage Soup
Description
This soup begins by browning Italian sausage, imparting rich umami and spice depending on choice of mild or hot sausage. Garlic is added briefly to release aroma before combining cannellini beans, chicken broth, and Italian-style diced tomatoes to build a flavorful, hearty liquid base. Simmering allows the ingredients to meld, softening the beans and blending savory with acidity from the tomatoes. Fresh basil folded in at the end lends a fresh herbal brightness. Season to taste with salt and pepper, balancing the flavors. The result is a thick, stew-like soup with tender sausage pieces and creamy white beans, suitable as a main dish for lunch or dinner.
Ingredients
- 1 lb Italian sausage mild or hot
- 2 cloves garlic minced
- 2 (15 oz) cans cannellini bean rinsed and drained
- 32 oz chicken broth (I use Better than Bouillon Base)
- 28 oz can diced tomatoes Italian style, undrained
- 1/4 /4 cup basil fresh
- salt to taste
- black pepper to taste
Instructions
- In a large pot or dutch oven, brown the sausage. Drain. Add the garlic and sautee for one minute.
- Add the remaining ingredients (except the basil) and simmer for 15-20 minutes to let the flavors blend. Stir in the basil and serve.
