  • 1 yellow onion diced
  • 1 teaspoon garlic minced
  • 1 can chicken broth 14.5 ounces
  • 1 jar salsa verde 18.75 ounces
  • 1 can sweet corn drained, 15.25 ounces
  • 1 can tomatoes drained, diced fire roasted, 16 ounces
  • ½ teaspoon oregano dried
  • 1 pound rotisserie chicken shredded (about 2 heaping cups
  • 1 can White beans drained, 15 ounces
  • 1 medium jalapeño diced, for garnish
  • cilantro chopped, for garnish, fresh

Instructions

  1. Heat oil over medium heat in a dutch oven or large pot. Add onion and cook for about 5-7 minutes, or until translucent.
  2. Add garlic and cook for 1 minute.
  3. Stir in broth, salsa verde, corn, tomatoes, and oregano.
  4. Bring the mixture to a boil. Reduce the heat to low and allow to simmer for 10 minutes.
  5. Add shredded chicken and beans. Continue to simmer for 5-10 minutes.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped jalapeno and cilantro.
