Ingredients
- 2 tablespoons vegetable oil
- 1 yellow onion diced
- 1 teaspoon garlic minced
- 1 can chicken broth 14.5 ounces
- 1 jar salsa verde 18.75 ounces
- 1 can sweet corn drained, 15.25 ounces
- 1 can tomatoes drained, diced fire roasted, 16 ounces
- ½ teaspoon oregano dried
- 1 pound rotisserie chicken shredded (about 2 heaping cups
- 1 can White beans drained, 15 ounces
- 1 medium jalapeño diced, for garnish

Instructions
- Heat oil over medium heat in a dutch oven or large pot. Add onion and cook for about 5-7 minutes, or until translucent.
- Add garlic and cook for 1 minute.
- Stir in broth, salsa verde, corn, tomatoes, and oregano.
- Bring the mixture to a boil. Reduce the heat to low and allow to simmer for 10 minutes.
- Add shredded chicken and beans. Continue to simmer for 5-10 minutes.
- Season with salt and pepper to taste.
- Garnish with chopped jalapeno and cilantro.
