White Bean Chicken Chili Recipe

White Bean Chicken Chili features chunks of chicken breast simmered with onion, jalapeño, garlic, fire-roasted diced green chiles, cumin, coriander, and chicken stock. The chili is enriched with white beans and corn added near the end of cooking, resulting in a hearty stew with tender chicken and a flavorful, slightly spicy broth. It’s typically garnished with avocado, cilantro, hot sauce, and served with tortilla chips or cornbread, offering layers of textures and complementary flavors.

Description

This chili recipe combines raw chicken breast pieces with aromatics like onion, jalapeño, garlic, and fire-roasted green chiles, along with ground cumin and coriander, creating a robust base when cooked in chicken stock for several hours in a crock-pot. Once the chicken is tender, it is shredded and returned to the pot. White beans and frozen corn are stirred in and cooked further to blend flavors and add texture. The final dish is a nourishing stew with a mildly spicy and savory profile, featuring tender chicken and creamy beans. It can be garnished with fresh avocado, cilantro, a squeeze of lime, and hot sauce to add brightness, creaminess, and heat. Serving it with tortilla chips, cornbread, or crackers adds crunch and a contrasting element to the meal.
