Ingredients

  • 1 tbsp olive oil
  • ½ onion diced, sweet yellow
  • 1 clove garlic minced
  • 1 cannellini bean rinsed & drained, canned
  • ¾ cup chicken broth
  • cherry tomato halved, handful
  • ¾ tsp tomato paste
  • ¾ tsp white balsamic vinegar
  • salt to taste, sea salt and freshly cracked
  • black pepper to taste, sea salt and freshly cracked
  • 2-3 basil chiffonade (or chopped, leaves

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the onion and cook, stirring occasionally, for 6-7 minutes.
  3. Add the minced garlic and cook, stirring constantly, for 1 minute.
  4. Add the rinsed and drained white cannellini beans, chicken broth, cherry tomato halves, tomato paste, and white balsamic vinegar.
  5. Gently stir until well combined. Simmer for 10 minutes; taste and season with sea salt and freshly cracked pepper, to taste.
  6. Add fresh basil then pour into a serving bowl and serve. Enjoy.
