Ingredients
- 1 tbsp olive oil
- ½ onion diced, sweet yellow
- 1 clove garlic minced
- 1 cannellini bean rinsed & drained, canned
- ¾ cup chicken broth
- cherry tomato halved, handful
- ¾ tsp tomato paste
- ¾ tsp white balsamic vinegar
- salt to taste, sea salt and freshly cracked
- black pepper to taste, sea salt and freshly cracked
- 2-3 basil chiffonade (or chopped, leaves
Instructions
- Heat the oil in a large skillet over medium heat.
- Add the onion and cook, stirring occasionally, for 6-7 minutes.
- Add the minced garlic and cook, stirring constantly, for 1 minute.
- Add the rinsed and drained white cannellini beans, chicken broth, cherry tomato halves, tomato paste, and white balsamic vinegar.
- Gently stir until well combined. Simmer for 10 minutes; taste and season with sea salt and freshly cracked pepper, to taste.
- Add fresh basil then pour into a serving bowl and serve. Enjoy.
