Ingredients
- 2 lbs. chicken breast
- 1 onion or 2 small onions, finely diced, large
- 1 jalapeño finely diced
- 2 teaspoons chili powder
- 2 teaspoons cumin
- 1/4 teaspoon garlic powder
- 1 teaspoon Mexican oregano optional
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 cups chicken broth 32 ounces
- (2) ounce green chilies diced, canned
- (2) ounce White beans such as White Northern, drained, canned
- (1) ounce cream cheese
- 1/2 cup cilantro chopped, leaves
Toppings:
- cheese
- avocado
- sour cream
- tortilla strips
Instructions
- To make White Chicken Chili in slow cooker crockpot:
- Place chicken breast, onion, jalapeno, spices, and chicken broth in slow cooker and cook for low for 5-6 hours. Remove lid and shred chicken.
- Add green chilies, white beans, cream cheese, and cilantro leaves. Cook for 1-hour longer or until cream cheese is melted.
- Top with cheese, sour cream, tortilla strips, and avocado
To make quick and easy White Chicken Chili:
- Use rotisserie chicken or 2 lbs. of poached shredded chicken breast.
- In a large pot, saute finely diced onion and jalapeno in 1 Tablespoon of oil for 7-8 minutes over medium heat. Sprinkle with spices. Stir in chicken broth, shredded chicken, green chilies, white beans, cream cheese, and cilantro.Cook on medium-low for 20 minutes or until cream cheese is melted.
