White Chocolate Almond Bars
Description
This recipe begins by melting butter and chopped white chocolate together over low heat until smooth. Eggs and sugar are beaten until pale and thick, then flour, salt, vanilla, and the white chocolate mixture are incorporated to form a rich batter. Half the batter is spread in a prepared square pan and baked until lightly golden, forming a base layer with a delicate texture.
Once cooled slightly, a layer of strawberry, blueberry, cherry, or peach jam is spread evenly over the base. The remaining batter is combined with white chocolate chips and gently spread over the jam. Sliced almonds are sprinkled on top to add crunch and texture. The bars are baked again until set and a toothpick comes out clean or with few crumbs, resulting in a layered bar with a sweet jam center, creamy white chocolate flavor, and nutty topping.
After cooling completely, bars are cut and can be enjoyed immediately. The combination of fruit jam and white chocolate makes each bite sweet yet balanced by the almond crunch.
These bars can be stored in an airtight container at room temperature for a few days or refrigerated longer. Freezing is also possible, with thawing recommended before serving to restore texture and flavor.
Ingredients
- 1/2 cup butter
- 6 ounces white chocolate chopped into small pieces
- 2 large egg room temperature
- 1/2 cup sugar
- 1 cup flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 1/4 cup jam strawberry, or blueberry, cherry, peach
- 3/4 cup white chocolate chips
- 1/4 cup almonds sliced
Instructions
- Pre-heat oven to 325°, grease and flour or line with parchment paper an 8 or 9 inch square cake pan.
- In a small pot on low heat melt the butter, add the chopped white chocolate, combine until smooth, set aside.
- In a mixing bowl on medium high speed, beat the eggs and sugar until thick and pale yellow) approximately 5 minutes. Add the flour, salt, vanilla and white chocolate mixture, beat on low or mix with a wooden spoon to combine well.
- Spread half of the batter on the bottom of the prepared pan, bake for approximately 13-15 minutes, or until lightly golden, cool 5 minutes, spread evenly with the jam.
- In the remaining batter stir in the chocolate chips, spread evenly and gently over the jam, sprinkle with sliced almonds. Bake for approximately 25 - 30 minutes (or until toothpick comes out clean or with a couple of crumbs attached). Cool completely before cutting. Enjoy!
Notes
- Remove butter and eggs from the refrigerator at least 60 minutes before preparation to ensure they reach room temperature.
- Store cooled bars in an airtight container with parchment paper between layers; they keep up to 3 days at room temperature or 5-6 days refrigerated.
- Bars freeze well for up to 3 months; thaw at room temperature before serving to retain texture and flavor.
