White Chocolate Almond Bread Pudding

This White Chocolate Almond Bread Pudding is one of my most favorite desserts! Its easy to make, tastes delicious, and its not a dessert that people have often so its a special little treat.

Ingredients
- 3 cup heavy cream
- 1 ½ cup sugar
- 12 egg yolks
- 1 teaspoon vanilla extract
- 1 large loaf french bread cut into 1 inch cubes
- 1 bag white chocolate chips
- 2 oz sliced almonds
Instructions
- Pre-heat oven to 350 degrees
- Crack 12 eggs into a bowl, and separate out the yolks.
- In a sauce pan, heat heavy cream and sugar until it just starts to bubble
- Slowly add cream and sugar mixture to egg yolks while whisking vigorously. Repeat this step until about half of the cream mixture is mixed in with the egg yolks.
- Add the egg yolk and cream mixture to the sauce pan, and continue to heat for an additional 3-4 minutes.
- Remove from the heat, add vanilla, and stir. Set aside.
- Cut up the french bread into 1 inch cubes
- Add french bread, and the egg yolk mixture to a large bowl and let sit for 30 minutes
- Add white chocolate chips, and sliced almonds to the bowl and mix gently
- Add mixture to a greased casserole dish and bake for 35-40 minutes
- Remove and let cool for 30 minutes before serving
Notes
- Make sure that you pour the warm cream mixture very slowly into the egg yolks. This is call tempering and will keep the eggs from becoming a scrambled egg texture.
- If this is your first time tempering, you can pass the mixture through a fine mesh strainer when you are done cooking it to get out any lumps!
- Add a pinch of cinnamon to the mixture for a warm fall flavor.
- Buy your almonds pre-sliced! No one wants to chop up almonds!
- Save some white chocolate chips to put on top before baking.
- Don't skip the 30-minute cool down before eating! This allows the bread pudding to set. That way, when you cut into it you will get a solid piece rather than individual bread chunks. It's good either way though!
