Ingredients

  • 1 cup almond butter
  • ¼ cup butter softened
  • 1 cup powdered sugar
  • 2 tablespoons cocoa powder unsweetened
  • 4 cups rice cereal crisp
  • 8 ounces white baking chocolate
  • 4 ounces vanilla-flavor candy coating
  • 2 teaspoons shortening

Instructions

  1. Line a large baking sheet with parchment paper or a silicon baking mat. Set aside.
  2. In a large bowl, add 1 cup almond butter and ¼ cup softened butter. Using an electric hand mixer on medium speed, mix for 30 seconds.
  3. Gradually add 1 cup powdered sugar and 2 tablespoons unsweetened cocoa powder, beating until combined. Stir in 4 cups crisp rice cereal.
  4. Shape the truffle mixture into 1-inch balls, place on the prepared baking sheet, and freeze until firm for about 30 minutes.
  5. In a small bowl, microwave 8 ounces white baking chocolate, 4 ounces vanilla-flavor candy coating, and 2 teaspoons shortening until melted and smooth.
  6. Using a fork, dip the chilled balls into the melted chocolate and place them on the prepared baking sheet. Chill until firm for about 5-10 minutes.
