The melted butter is then combined with sugars, vanilla, salt, and carefully whisked eggs to form a smooth, thick batter. Flour and baking soda are gently folded in, followed by white chocolate chips and chopped macadamia nuts. The dough is portioned and baked at 375°F until the cookies achieve a golden edge with a tender interior.   • 1 3/4 cups all-purpose flour unbleached
  • 1/2 teaspoon baking soda
  • 7 ounces butter 14 Tablespoons, unsalted
  • 1/2 cup granulated sugar (3 1/2 ounces)
  • 3/4 cup dark brown sugar 5 1/4 ounces, packed
  • 1 teaspoon salt or kosher, sea salt
  • 1 tablespoon vanilla
  • 1 large egg
  • 1 large egg yolk
  • 8 oz white chocolate chips
  • 3/4 cup macadamia nuts chopped

Instructions

  1. Heat oven to 375 degrees F. Place oven rack in the middle position of the oven.
  2. Line 2 cookie sheets with silpat or parchment paper.
  3. In a bowl whisk flour and baking soda together.
  4. In a large skillet, heat 10 Tablespoons butter over medium high heat, swirling pan until butter turns a golden brown and has a nutty aroma. Remove from heat, pour melted butter into a large mixing bowl and add the remaining 4 Tablespoons butter, whisking until butter melts.
  5. Whisk in both sugars, vanilla, and salt into bowl, mixing until fully incorporated. Add whole egg and egg yolk to sugar and butter mixture, whisking until smooth and shiny. Let the mixture rest 3 minutes. Repeat this step, whisking and resting twice, until it's smooth, shiny and thick.
  6. Add flour mixture and incorporate with a rubber spatula, just until combined.
  7. Fold in white chocolate chips and macadamia nuts until everything is combined and no flour pockets remain.
  8. Use a cookie scoop, or weigh dough into 16 equal portions. (About 3 Tablespoons)
  9. Place dough balls onto prepared cookie sheets, about 2 inches apart, 8 to a cookie sheet.
  10. Bake trays one at a time for 10 to 14 minutes rotating trays halfway. Cool a few minutes and then transfer to a rack to finish cooling.
