White Chocolate Cranberry Fudge
Description
This fudge recipe starts by melting white chocolate morsels and cream cheese frosting, which together form a creamy base. Dried cranberries are folded in, providing bursts of chewy, tangy flavor against the sweet fudge. The mixture is poured into a prepared pan and topped with additional cranberries before chilling for several hours to firm up.
The white chocolate and frosting give a smooth, sweet mouthfeel, contrasting nicely with the chewy cranberries. Cutting into 1-inch squares yields individual rich pieces ideal for serving at parties, gifting, or dessert platters.
For enhanced cranberry taste, a small amount of cranberry extract can be added, though the dried cranberries contribute significant flavor on their own. Using quality white chocolate and cranberries affects the final taste, so opting for preferred brands improves results. Storage in the refrigerator or freezer prolongs freshness, with refrigeration recommended for up to two weeks and freezing for up to three months.
Ingredients
- 2 Cups white chocolate morsels
- 1 cream cheese frosting 16 ounces, canned
- 1 ½ Cups dried cranberries
Instructions
- Line an 8-inch square pan with parchment paper. Set aside.
- Place the morsels in a medium bowl and microwave on high for 2-3 minutes or until the chocolate is smooth and creamy. Pause to stir every 30 seconds during this step.
- Be sure to remove the lid and foil of the frosting can before placing it in the microwave on high for 45 seconds or until fully melted.
- Combine the chocolate, frosting, and 1 cup of cranberries. Stir until fully combined.
- Pour into the prepared pan. Evenly spread the mixture and top with the remaining cranberries.
- Chill for 3 hours or until fully set.
- Cut into 1-inch squares, serve, and enjoy!
Notes
- Adding cranberry extract can intensify cranberry flavor but is optional since dried cranberries contribute strong taste.
- Use good-quality white chocolate morsels like Nestle Toll House for better mixing and flavor.
- Store fudge in a sealed container in the fridge up to two weeks or in the freezer up to three months.
