White Chocolate Cranberry Oatmeal Bars

These bars blend old fashioned oats, flour, and brown sugar for a chewy base studded with white chocolate chips and dried cranberries. The texture is slightly tender but holds together well when baked. They bake in a 9x13 pan and are cooled before slicing to set properly. The mix of sweet white chocolate and tart cranberries provides balanced flavor, making them a practical sweet snack or breakfast treat.

Description

The White Chocolate Cranberry Oatmeal Bars combine rolled oats, flour, brown sugar, baking soda, salt, vanilla, eggs, and melted butter in a stand mixer until just combined. White chocolate chips and dried cranberries are folded in by hand to preserve their shape and distribution. The batter is spread evenly into a prepared baking dish and baked at 350°F for 25 minutes, aiming for a slightly underdone center to maintain moisture and tenderness.

Once cooled for one hour, the bars cut cleanly into portions. The oats provide chewiness, while the white chocolate melts gently within the bars. The cranberries add a bright, fruity contrast. The texture is soft but holds shape well after cooling.

These bars combine portable ingredients for a reliable soft-baked treat. Cooling is crucial before slicing to prevent crumbling. Using unsweetened baking spray or parchment ensures easy removal.
